"Our biological self is the structure of our body that defines us. It is only by understanding this structure that we can choose the right food to ensure psychological and physical health and wellbeing".

The food on the table is the same for everyone in terms of chemical composition, but each person has his own unique body, different from all the others. We must first know our own bodies, our "personal biology", and then choose the best food to ensure personal health and wellbeing, both mental and physical. In recent years, discoveries in the field of nutritional genomics have shown that the foods we eat every day can "talk" to the cells and DNA in our bodies.

Calories don't act upon DNA, nor do they exert an influence on our metabolism. Rather, it's the molecular makeup of foods, that is, their different nutritional content, which conditions the cellular metabolism and hormones of a living organism after a meal.

A mindful molecular diet goes beyond the daily calculation of calories; it goes beyond food's weight to focus on appropriate proportions, recovering the sense of satiety, on the quality - and not only on the quantity - of what we eat.

Pier Luigi Rossi is a doctor specialised in Food Science and in Hygiene and Preventive Medicine, a professor in the Nutrition and Health Education master's program at the University of Bologna and a professor at the University of the Republic of San Marino. Professor (a.c.) in Nutritional Science at the Università degli Studi di Siena-Arezzo from 1995 to 2009. Expert member of the Superior Council of Health from 2003 to 2006 and Medical Director of the local public health unit (Arezzo) from 1990 to 2009.

From 1990 up to today, Dr. Rossi has been a guest on the RAI, on shows such as "Più Sani Più Belli", "Linea Verde", "Uno Mattina", "Domenica IN", "Geo&Geo", "Occhio alla spesa", "Uno Mattina Verde", "Medicina 33" and TG1.

He devised the mindful molecular diet and is the author of books and scientific studies. In 2014 he published with Aboca Edizioni the book Dalle calorie alle molecole - Il nuovo orizzonte del controllo del peso.
